The paper examines data from the nearly legendary "BSK Study", where a dairyman has his own raw milk inoculated with pathogens. The rationale for the paper

I developed this website in response to questions from consumers about raw milk information. In July of 2009 I wrote an article on the Ethicurean about the state of information about raw milk, specifically the issue of raw milk's ability to kill pathogens.

The fact is that both regulators and raw milk advocates cite the same studies about the ability of raw milk to kill pathogens. They reach vastly different conclusions from the same data. In both instances their conclusions are overly simplistic.

Raw milk is a complex medium and the research on its ability to kill pathogens makes that clear. For raw milk consumers interested in making an informed decision about their food consumption, we need a more thorough analysis of the literature.
